You can easily make creamy and flavorful hummus in the Instant Pot, which gives it a rich texture and taste. Amy and Jacky have tested and approved it.
Ingredients:
- 2 cups dried chickpeas, soaked overnight
- 1 teaspoon baking soda
- 4 cups water
- 1/2 cup tahini
- 2 cloves garlic, minced
- 1/4 cup fresh lemon juice
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- Salt to taste
- 3 tablespoons extra virgin olive oil
- Water for thinning, if needed
Instructions:
Rinse and drain soaked chickpeas
Add chickpeas, baking soda, and water to Instant Pot
Pressure cook on high for 20 minutes, then natural release for 10 minutes
Drain chickpeas and rinse under cold water
In a food processor, blend chickpeas, tahini, garlic, lemon juice, cumin, paprika, and salt until smooth
Adjust consistency with water if needed
Transfer to serving bowl, drizzle with olive oil, and garnish with additional cumin and paprika
