Slow Cooker Chicken Caesar Sandwiches



These Slow Cooker Chicken Caesar Sandwiches are a heart-healthy twist on the classic Caesar salad, featuring tender shredded chicken tossed in a creamy, tangy Caesar dressing. Served on whole wheat buns with crisp romaine lettuce and juicy cherry tomatoes, these sandwiches are a satisfying and delicious meal option.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup low-sodium chicken broth
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/4 cup non-fat Greek yogurt
  • 1/4 cup light mayonnaise
  • 2 tablespoons lemon juice
  • 8 whole wheat sandwich buns
  • 2 cups shredded romaine lettuce
  • 1/4 cup sliced cherry tomatoes

Instructions:

Put chicken breasts and chicken broth in a slow cooker

On top of the chicken, put black pepper, garlic powder, onion powder, Parmesan cheese, and oregano

Keep the lid on and set the heat to low for 4 to 6 hours, or until the chicken is fully cooked and soft

Take the chicken out of the slow cooker when it's done cooking and shred it with two forks

To make the Caesar dressing, put Greek yogurt, mayonnaise, and lemon juice in a small bowl and mix them together

Put the chicken shreds back into the slow cooker and mix in the Caesar dressing until everything is well covered

Put the lid on top and cook on low for another 30 minutes

To make the sandwiches, put some of the chicken mixture on each bun and then add shredded lettuce and tomato slices on top

Serve right away and enjoy!
