Ingredients:
- 2 cans black beans, drained and rinsed
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 can diced tomatoes
- 1 cup corn kernels
- 1 jalapeo, finely chopped
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon oregano
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 cups vegetable broth
- Fresh cilantro, chopped for garnish
- Lime wedges for serving
Instructions:
In a large pot, heat olive oil over medium heat
Add diced onion and garlic, saut until softened
Add red and green bell peppers, jalapeo, and cook until vegetables are tender
Stir in chili powder, cumin, oregano, salt, and pepper
Add drained black beans, diced tomatoes, corn, and vegetable broth
Bring the chili to a simmer and let it cook for 20-25 minutes, stirring occasionally
