Creamy Spinach Parmesan Gnocchi

Ingredients:

  • 1 lb gnocchi
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions:

Cook gnocchi according to package instructions

Drain and set aside

In a large skillet, melt butter over medium heat

Add minced garlic and saut until fragrant, about 1 minute

Add fresh spinach to the skillet and cook until wilted

Pour in heavy cream, stirring constantly, and bring to a simmer

Reduce heat to low and gradually add grated Parmesan cheese, stirring until melted and smooth

Season with salt and pepper to taste
