Roasted Tomatillo Guacamole is a flavorful twist on traditional guacamole. The roasted tomatillos add a smoky and slightly tangy flavor that pairs perfectly with the creamy avocados. It's a delicious dip or topping for your favorite Mexican dishes.
Ingredients:
- 4 tomatillos, roasted and diced
- 2 avocados, peeled and pitted
- 1/2 cup red onion, finely chopped
- 1 jalapeo pepper, seeded and minced
- 2 cloves garlic, minced
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- Salt and pepper to taste
Instructions:
Put the tomatillos under the broiler for 5 to 7 minutes, or until they get a little charred
Use a fork to mash the avocados in a bowl until the texture you want is reached
Toast the tomatillos and then mix them with the garlic, red onion, jalapeo pepper, and jalapeo pepper
Add the lime juice and fresh cilantro and mix well
Make sure to mix the ingredients together well
Add pepper and salt to taste
If you need to, change the seasoning
You can serve the guacamole right away, or you can put plastic wrap directly on top of it to keep it from browning and put it in the fridge until you're ready to serve
