VEGAN BBQ Sandwich



This Vegan BBQ Sandwich is made with tender, shredded jackfruit cooked in a savory BBQ sauce. It's perfect for a quick and easy meal that's packed with flavor!

Ingredients:

  • 1 can jackfruit in water or brine, drained and shredded
  • 1 cup BBQ sauce
  • 1 onion, thinly sliced
  • 1/2 cup vegetable broth
  • 1 tablespoon olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper, to taste
  • 4-6 whole grain buns
  • Optional toppings: coleslaw, pickles, vegan cheese

Instructions:

In a skillet, heat olive oil over medium heat

Add sliced onion and cook until softened, about 5 minutes

Add shredded jackfruit, soy sauce, garlic powder, paprika, cumin, chili powder, salt, and pepper

Stir to combine

Pour in BBQ sauce and vegetable broth

Stir until jackfruit is well coated

Transfer mixture to a crock pot and cook on low for 4-6 hours, stirring occasionally

When ready to serve, toast whole grain buns and top with BBQ jackfruit mixture

Add optional toppings if desired, such as coleslaw, pickles, or vegan cheese

Serve hot and enjoy!
