Blueberry and Yogurt Crepes



Blueberry and yogurt crepes are a delicious way to start the day or have brunch. It's impossible to say no to a thin crepe stuffed with sweet blueberries and creamy Greek yogurt.

Ingredients:

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 1/4 cups milk
  • 2 tablespoons melted butter
  • 1 cup fresh blueberries
  • 1 cup Greek yogurt
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • Additional butter or oil for cooking crepes

Instructions:

Whisk the flour, sugar, and salt together in a bowl

First, beat the eggs in a different bowl

Then, add the milk and broken up butter

Combine well

Add the wet ingredients to the dry ones slowly while stirring them together until you have a smooth batter for crepes

Put a nonstick skillet or crepe pan on medium heat and add a little butter or oil to coat it

Pour a small amount of crepe batter into the hot pan and swirl it around to make it spread out evenly and thinly

Just wait a minute or two until the bottom is golden brown and the edges start to lift

Turn it over and cook the other side for one more minute

Do it again with the rest of the batter, and if necessary, add more butter or oil to the pan

Mix the Greek yogurt, honey, and vanilla extract together in a different bowl until everything is well mixed

Spread a large spoonful of the yogurt mixture on top of each crepe, and then top with fresh blueberries

To make a triangle, fold the crepes in half and then in half again

If you want, you can drizzle more honey over the warm Blueberry and Yogurt Crepes before serving
