A comforting and flavorful vegan version of classic chicken noodle soup. Perfect for chilly days or when you're feeling under the weather.
Ingredients:
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 4 cups vegetable broth
- 2 cups water
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 8 oz vegan chicken strips
- 2 cups uncooked noodles
Instructions:
In a large pot, saut onion, carrots, and celery until softened
Add vegetable broth, water, thyme, parsley, garlic powder, salt, and pepper
Bring to a boil
Reduce heat and simmer for 10 minutes
Add vegan chicken strips and noodles
Cook for an additional 10 minutes or until noodles are tender
Adjust seasoning if necessary
Serve hot and enjoy!
